One of my biggest problems when making my own projects is feature creep, where things don't get scoped out properly at the start and you end up thinking of new stuff to add as you go, until eventually the whole scale of the project is far out of proportion.
Sometimes an iterative approach can be beneficial, it's useful to build on feedback and sometimes you really can't plan for everything. It can also be extremely detrimental, and result in a lot of wasted time. I imagine a lot of early access projects never get finished because of this.
So what do I do? Well, if I get bored of a project, I just move on.
It's not that I'm disloyal to an idea, but once the amount of effort I start pouring into something results in diminishing returns, I don't see a point in continuing. It's not giving up since I still try to publish everything, finished or not, but being aware of the sunk cost fallacy associated with stuff like this is useful.
My time is better wasted on something more important...
